I know that this whole COVID-19 thing is throwing us all for a loop, but it doesn’t all have to be bad. You can eat better, and probably healthier, now than you ever did in the office. Take a little time and treat yourself to a nice mid-day meal. Here’s a secret, the better you eat in the middle of the day the less you’ll want to eat for dinner and you’ll sleep better too.
So here’s some of the stuff I’ve been eating since the quarantine began. I’m wrapping up a month of all vegan eating, so all these meals are plant-based.
